Quinoa breakfast bowl with spinach, cherry tomatoes, and fried egg

Ingredients:

1/2
cup cooked quinoa
·
1
cup spinach
·
1/2
cup cherry tomatoes
·
1
egg
·
olive
oil or cooking spray
·
salt
and pepper, to taste
Instructions:
1. Cook quinoa according to package
instructions.
2. Heat a small skillet over medium heat
and add a bit of olive oil or cooking spray.
3. Crack the egg into the skillet and cook until the whites are set and the yolk is cooked to
your desired doneness.
4. While the egg is cooking, divide the
cooked quinoa between bowls and top with spinach
and cherry tomatoes.
5. Once the egg is cooked, place it on
top of the quinoa and vegetables.
6. Season with salt and pepper to taste.
