Instructions:
1. Toast the bread to your desired level
of doneness.
2. While the bread is toasting, mash the avocado in a small bowl.
3. Beat the eggs in a separate bowl and
scramble them in a pan over medium heat
until cooked to your liking.
4. Halve the cherry tomatoes.
5. Spread the mashed avocado over the
toast.
6. Top the toast with the scrambled eggs
and cherry tomatoes.
7. Season with salt and pepper to taste.
This recipe makes 2 servings. You can
customize the toppings to your liking - try adding some
diced onions or bell peppers to the eggs, or sprinkle some cheese over the top before serving.
